Chocolate Chip Chronicles: Part II

This is a two part Part II because I’ve had two tests with my chocolate chip cookies.

Um, that line makes this sound like a Dr. Suess adventure, which I promise, it is not.

Test One
I baked The Disco Chip at 350 degrees and… nope. Too much spread. I could have baked it for longer but that didn’t seem right either.

I did end up with that gooey, mostly raw cookie, but this level of raw was a bit much. Excellent for me, great with some ice cream, but not exactly great when you want to share this cookie with other people. Which is the whole point. I wouldn’t be here doing this if I just wanted to make raw cookies all day. They do not package or travel well as you can imagine.

Test Two
My original recipe was really good. I loved the flavor overall, I really liked the texture, but I found it too sweet. Even with bittersweet chocolate to balance out the flavor it was overwhelming. Some people might like the overly sweet flavor (do you also love royal icing?) it could work. I am determined to find the perfect balance.

And I was also itching to try the cold butter method. And I was excited so I skipped my usual procedure and did not chill my test bakes.

SHAME! No surprise they spread a whole lot more than I expected. Even with the cold butter method because everything warms up when you start whipping it around in a stand mixer. And we doubled the pan because last time around the bottoms browned a bit too much.

Guess what? Now I can do another round of baking with my chilled dough. This is an absolute win all around, except for my pants, which are wondering why they are beginning to stretch to their max.

I also made some tiny modifications to the ingredients to elevate the flavor overall and give the cookie a little Ooooh moment. It worked.

At the last minute I did an extra text bake and swirled in some of my fudgy brownie filling. Chocolate chip cookies and brownies sounds like the best of both worlds to me. The brownie filling easily incorporates into the dough and offset the cookie sweetness even more. It’s a nice variation.

Ultimately, love the new The Disco Chip modifications. Will still have to see what happens with the chilled version of the cookie, hoping for less spread and more lift (is it a bra or a cookie?)
