Followed a new recipe for a take on a super thick chocolate chip + surprises cookie, and it took everything in me to trust the process and forge ahead.

These Smash cookies were so different from any other chocolate chip cookie I’ve ever made in terms of dough consistency, and the way they held their shape while baking. Technically I suppose you don’t really call them a chocolate chip cookie but I still feel very strongly they belong to the chocolate chip family.

Exactly as the recipe, from Zoë Bakes Cookies, states, the dough comes together like a crumb topping. The dough is shaped into large balls, chilled, then baked. When baking is finished you smash the cookie down to flatten it slightly and keep the inside gooey while the outside has a terrific golden color and a tiny bit of crunch.

I did not expect the dough to hold its shape in the oven! I even thought I did something wrong as I kept taking a peek at the 5 and 10 minute marks. I expected it to spread a bit but it held together. It was a fantastic surprise and made the smash all the more satisfying.

To my Smash cookies I added toasted coconut and walnuts. Wow, winner. Maybe a little bit too sweet for me personally but I can adjust that with the type of chocolate and coconut I use moving forward.

I will absolutely be making these cookies again and with different variations and add-ins. Tart cherry, dark chocolate and walnut sounds dreamy to me.
